bracciole casserole-will make the house smell real good :) by DEBRA ELLIOTT·THURSDAY, OCTOBER 13, 2016 <3 >< with GLUTEN-FREE, LOW CARB, VEGETARIAN, VEGAN, and DIABETIC options.... layer lasagna style: cabbage leaves, with spines removed.and light life Italian vegan sausages cut thin and length ways, drizzled with olive oil.....fill each layer about a half an inch, with a mixture made with....cooked chic peas, and chopped : onion, basil, bell pepper, parsley, green olive, black olive, minced garlic, sun dried tomato, olive oil, Italian seasoned bread crumbs, and freshly shredded Parmesiano Reggiano, or if vegan- GO VEGGIE OR LIGHT LIFE PARMESIAN OR MOZZERELLA SHREDS . Top with marinara . Bake at 350, in pre-heated oven,, until heated through with cheese melted.. about 45 minutes to an hour depending on how deeply layered. Three to four layers, is the usual depth. Some folks also add golden raisins, cooked broccoli, chopped cooked spinach. Be very generous with the bread crumbs. You can use beef flavored bread crumb stuffing if not vegan, and if vegan, you can add ‘’Hains powdered brown gravy mix’’ [but check for gluten]to the bread crumbs, to make vegan beef flavored stuffing. If keeping carbs low, or being GLUTEN-FREE...and especially for diabetics, just omit breadcrumbs altogether and substitute cooked riced cauliflower.

chestnut lentil fennel soup

Almost so thick and hearty, some call it a stew. Offering the enticing aroma of onion, celery, carrot, chestnut, fennel, with quinoa, faro , red lentil, parsley, sage, rosemary, thyme, basil, oregano, a tiny pinch of red pepper flakes and white pepper, just for warmth, ... and some less classic ingredients smokey vegan sausage, finely ground white chia seed, finely ground pumpkin seeds, and cashew halves, and special ingredients that you won’t obviously taste, but will influence and blend flavors, such as a dash of brewers yeasts, and KAL nutritional yeastflakes, and the star of the culinary performance, steamed or baked, chestnuts, offering a mild, nostalgic sweetness.
So I start by saute’ing with a dear old well seasoned cast iron deep dish skillet, generously coated in slowly warmed olive oil. To this I add the minced onion, minced carrot, minced fennel, minced celery, and cook on low slow heat until soft and tender.
Now I add a bit of good quality water, and dry white wine, that must be good enough to drink, not cooking wine..the acid and flavor from the wine is absolutely needed. After the flavors blend, add the faro, qinoa, and wait until soft and cooked.
Now transfer all to a dutch oven. I like the clay ones.
Add the chunks of carrot, onion, fennel, celery, chestnut, cooked lentil, smokey vegan sausages, the herbs, ground pumpkin seed, cashew halves, and spices, and bake, covered in the preheated oven at 350 F for an hour with enough water to go 2 thirds way up the dutch oven pot’s sides. Add a cup of the white wine.
Check an hour later, and continue until veggies, and cashews, are tender but not mush.
Now add the ground white chia seeds, gently stir until well mixed....
Turn off heat and let it rest, covered ten minutes.
Come back, gently stir the now thickened broth, and serve right away, steaming hot, but just before you ladle it from the dutch oven, you must add a dash of fresh squeezed lemon juice, and once in each bowl, drizzle with olive oil, and top with a slice of twice toasted dark, grainy bread.
Serve with a salad of spring greens and baby spinach, with olive oil and vinegar, and that loaf of dark grainy bread, and the rest of the dry white wine.
Now, for the experienced cook, you decide the portions... but for the anxious new cook, I will take your hand and give you measurements.
chia powder half cup....
veggies minced 2 cups each....
veggie chunks 2 cups each...
cut up chestnuts 3 cups
spices and herbs all dashes...
wine in skillet, one cup...
lemon juice half cup...
cashews, faro, quinoa, one cup each.
lentil, 2 cups dry, before cooking,...
smokey vegan sausage, 4 cups...
a 6 quart dutch oven
I think that’s everything, and of course, I myself, never measure, it is like a dance, for me.

AWESOME VEGAN DIABETIC SHAKE RECIPE

Well, Dear Diabetic vegan friends, I hope you have a fantastic Sunday.
.
You might like to start with a Nutty Chocolate Shake. that low carb low glycemic, good fiber, the right amount of fats, the right amount of protein, and awesomely yummy
.
I think it is tweakable lol... meaning you can play around with your preferences for the ingredients, for example, you can choose a nut lower in cholrsterol...
I mix 2 cups nuts, in blender with 8 ounces water, then strain and save the crumbs for another recipe.
.
First add one 8 ounce bottle of water or filtered tap water , like Brita or some other filtered water....
.
Start whirring on slow with the top on nice and tight. Remove the center fill hole cap, carefully...
.
Now add your almond OR peanut OR pistachio OR macadamia OR hazelnut, OR pecan OR brazil nut, OR cashew..2 cups of nuts.
.
By cup, I mean from a Baking measuring set, I don't mean your coffee or tea cup...
.
Blend and strain them through a fine sieve, and put aside the crumbs to use as a salad topping... and in wraps.
.
Now add a tablespoon ish of avocado... does not need to be ripe.
.
Then add one little ole teaspoon of your fave oil.... preferably organic cold pressed...
.
Then add cocoa or carob, I prefer cocoa a whole lot more...use 2 tablespoons from your bakers measuring spoon set....
.
NOW, I like mine without sweetener.
.
If you gotta have it sweet....
Let me emphasis that Stevia is the only Alkaline natural sweetner, one of my friends,  loves Xylatol,
Just don't use sugar, don't use splenda, equal, aspartame, that stuff will hurt you a lot,... it's all over google, go see for yourself. .
to furthur make my point, even my town's hospital won't serve diet soda on their patient menus, I asked why, noy because I wanted anything, but because, I was interested in their answer. They said it causes cancer, and strongly challenges good health and healing...
.

If you use Stevia, remember that it is extremely concentrated... use only a tiny tiny tiny pinch....and your brand must be checked carefully for MALTO DEXTRIN... a true enemy for Diabetics because it raises blood sugar faster and higher than sugar. I call it the ''Keds Sneakers'' of Diabetic enemies lol ... Remember the adds for keds sneakers ? It said you would jump higher and run faster... Well that's what Malto dextrin does to a diabetic's blood sugar... ok I made my point lol

I think the best brand of Stevia is the product I use, called Now organic pure Stevia...I use the powdered form...it has no fillers, and it comes with a teensey tiny measuring spoon...that truly is the perfect measurement...
.Now add your favorite protein powder, but only a small amount,anywhere from one teaspoon to one scoop... You're still whirring.....
I like Manitoba hemp protein...Don't bogart my hemp protein, dude lol ... yeah, I know... silly ....
.
The final ingredient is ice cubes so hope you made some lat night...add 2 3, or 4, depending on how frosty you like it. don't blend them down into water... The consistency should be like shave ice...

shydee aye and loobay recipe

the quick way:
Shydee aye :
rice and browned/baked spaghetti broken into one inch pieces, cooked in BETTER THAN BUILLION, NO CHIKEN BROTH, with a dash of syrian pepper, bell;s seasoning, and very important... a teaspoon of cinnamon with chic peas and one tablespoon light olive oil..

Loobay:
organic Muir glen basil pasta sauce, tastes just like grampa’s sauce...just add syrian pepper and a dash of cinnamon
pour over vegan chiken slicesinto thin strips, arranged on platter with whole steamed string beans..
DIABETICS-SUBSTITUTE the spahgetti/rice mixture, with...ZUCCHINI ZOODLES CUT IN 1 INCH PIECES, FOR THE PASTA and MIX WITH RICED CAULIFLOWER
Serve the Loobay sauce and chik’n with stringbeans, on top of the Shydee aye, rice dish...

delicious pistachio ice cream.

Craving a treat but watching those calories ? I found a really cool recipe ....
as a diabetic, i use avocado ...instead of banana...for the base and add natural flavor from low sugar nuts, and sneak in mild flavored low sugar veggies, and add nuts and seeds ground up, and then add some chopped nuts, too ... to make it thicker blend in a spoon or two of ground up white chia seed....  for example Pistachio ice creeem.. made with avocado, pistachios, a pinch of stevia, and a bit of pureed cauliflower, broccoli, kale, and sprouts... adds extra nutrition.and low cal substance...and the natural healthy plant fats from the avocado and nuts, helps nutrient absorption..make in vitamix or other high powered blender, or food processor......chill in freezer until firm...
ღ it really tastes just like real rich and delicious pistachio ice cream... lol ... the avocado makes it rich and creamy... and you can sneak in a spoon of coconut cream, too...if you like and a dash of coconut oil....(c)dee

Artichoke Stew

four cups tender, cooked artichoke hearts
two cups juiced organic carrots... only the juice...
eight cups, vegan better than bullion chickless broth
one cup minced fresh raw organic basil leaves
one cup minced cooked, soft, fennel, bub, stalk, leaves,..
one cup chopped cooked, soft, pine nuts
a pinch of fresh oregano powder
a dash of fresh lemon juice
a dash of coarse ground pepper
a dash of tumeric or saffron
a teaspoon of seaweed powder
two cups canoli beans, or fava beans, cooked
half cup COOKED pastini
two tablespoons robust flavor olive oil
half cup finely ground chia seed
half cup good, very dry, white wine

simmer on low heat.. stir frequently...
serve as soon as it’s hot...
serve with:
.with crusty bread, and olive oil for dipping,
a cucumber mint salad,
a beet and walnut salad
fresh raw pear slices
bigelow constant comment, or i love lemon, tea
