eggless 'omelette.
4 tbsp chikpea bean water, aquafaba or any water from can of any cooked beans... (save those chickpeas!)
1/4 cup finely chopped Chickpeas
1/2 cup chickpea flour
1/4 cup cold water
2 tbsp organic nutritional yeast
Dash of powdered red pepper flakes. sage, parsley, thyme, rosemary powder, cumin, basil, nutmeg....
Dash of turmeric
Salt, pepper
Combine everything is a bowl. Heat a cast iron pan and add 1tsp of oil of your choice (I used evoo). Once hot, pour in the batter. It should bubble up quite quickly... like pancakes. Carefully flip abd cook the other side until its golden.
You could fill this with veggies: saute shredded carrot, potato, fennel, asparagus, onion bell pepper. mushroom, vegan sausage crumbles, or apple/sweet potato/cinnamon/allspice...spinach, or eggplant/olive.... in evoo and garlic, with fresh lemon juice.
